Dah lama teringin nak try wat roti guna water roux. Ramai member-member blog sekarang ni wat roti guna water roux ni. Semua kata roti yang dihasilkan jadi lembut. Memang teruja aku nak menerainya.
So semalam wat eksperimen ke atas roti teh hijau dengan kacang
merah ni.
Hasinya memang lembut.
Sape-sape yang tak kenal lagi rupa water roux tu boleh tengok gambo kat bawah ni.
Dan ni resipinya. Amek kat
blog knor. Knor pulak amek kat blog orang lain. Orang lain tu pula amek kat blog org lain.. gitulah seterusnya. Terima kasih kepada semua yang memanjangkan resipi ni. Dan yang pasti.. sumber asalnya dari The Wandering Gourmet.
WATER ROUX
Source : The Wandering Gourmet
(Yields about 520g Water roux)
Water
Roux Starter is something used in bread making to make bread/buns
springy. The springiness is fairly noticeable when you have let the
bread/buns cool. Just poke your finger against the bun, you’ll see it
is springy – causing people young-at-heart to go, “Whee!” *ahem* To
make the Water Roux Starter, you need 1 part flour, 5 parts water.
Ingredients :
50g flour
250g water
1. Whisk the flour and water that you have decided to use in a bowl until it is whisked well and is free of lumps.
2. Put it on the stove and warm it up for 2-3 minutes at 65C. Be careful not to burn it!
3. Cover it with plastic wrap and store it in the fridge.
When using it, make sure it is at room temperature. The Water Roux Starter lasts for 3 days before it goes off.
Ingredients- 25g caster sugar
- 5g salt
- 250g bread flour
- 4g (1 teaspoon) Instant yeast
- 2 teaspoons green tea powder
- 143g fresh milk (aku guna HL low-fat fresh milk)
- 35g egg ( aku gantikan dgn water roux. x buh telur.. maleh nak bahagikan telur... sebab telur yg diguna ni tak guna abih 1 biji)
- 38g butter (unsalted)(aku guna buttercup je.. unsalted butter ni mahal ler :p )
Making Bread by Hand: ( Hana gune BM :D aku pulak guna mixer je :p)
- Place
caster sugar, salt, bread flour, green tea powder and yeast into a
mixing bowl. Mix the ingredients with hand. Make a well in the centre
of the flour mixture. Pour the lightly beaten egg and milk into the
well. Mix the ingredients to form a soft dough.
- Turn out the
dough onto a lightly floured work surface. Knead for about 5 mins until
the dough becomes smooth and non-sticky. Knead and mix in the butter
into the dough.
- Continue to knead dough for another 15mins until it becomes smooth, elastic and no longer sticks to hand and work surface.
- Smooth
the dough into a round ball. Let it rise in room temperature in a
mixing bowl, covered with cling wrap. Let dough rise for 60mins or
until it double in bulk.
- Remove dough and punch out the gas. Turn the dough onto a lightly floured work surface.
- Place
dough (seam side down) in lightly greased bread tin/pan. Cover with
cling wrap and let the dough proof for the second time for about 45~60
mins, until it fills up 80% of the tin/pan.
- Bake at pre-heated oven at 180 ~ 190 deg C for 30 to 35mins.
- Unmould the bread immediately when removed from the oven. Let cool completely before slicing.
